Bank Letter

Does the letter from a foreign bank have to state the funds held in Pounds Sterling or in the local currency?
Also, should I include the bank statements even though they are not required as supporting documents?

No. Pound sterling is not required to mention in the letter. Mention the currency account is in.

Bank statements are not required, you can attach if you wish so but case can be approved without them.

Bank Letter is more important than Bank Statement.

Only For Maintenance, Bank Statement is required, however there are other ways for showing maintenance money too (see policy guidance)
