Oh... the two cents from my Experience.....
Keep it simple.... No matter how many documents you prepare, they will accept/ask for only those they require. And yes if you take a copy of the documents, it will help to speed up the process.
I had one letter prepared from my current employer but they did not ask for any letters.....I just have a small query. Did you submit any letter from your employer stating number of UK absences (whether work related or not)

My first booking was at Croydon. Luckily, next night I found a slot for Solihull......
