appeal to extend schengen visa?

appeal to extend schengen visa?

My mother was issued type C single entry with a duration of 7 days from Spain embassy in Manila valid from May 12- June 2, 2016. Does this mean that she can only travel within the EU for 7 days despite having 2 weeks validity?
Can she appeal for an extension so she can visit other EU countries? She will be based in London for 6 months.
