We have 2 years annual accounts and one year management account, investment is in form of Share Capital for over £200k which has been made over 3 years period.

Do we need to submit all 3 years accounts or just management accounts will be enough?

You need to submit 2 year annual accounts as well as your management accounts. Basically, you need to cover the entire period when the investment was made.
