Edit to add: And, I don't want to do the "she's coming for 2 weeks" thing then have her stay for 5 months, as I'm sure that would prejudice any chance of getting a spouse/fiance visa in the future. Yes it would.

Apparently they have written a letter to that effect. I can't tell, it's in Chinese... If it's the same person she was working for before I met her, they're good friends from way back when, so the post will be genuinely held for her..... but I agree that persuading an IO of that could be difficult. I am writing to confirm I wish to invite Miss xxx xxx to visit me in the UK for up to 6 weeks, from around 12th December 2016, returning to China no later than the 22nd January 2017 (exact dates subject to flight availability).
The main purpose of her visit is to stay with me, and to meet my family. While she is here she will attend my father’s wedding in December, and celebrate Christmas with my family and I. We will also visit historic sites and other attractions around Cheshire, the Wirral and London.
I am willing to sponsor her visit and pay all the necessary travelling costs and any other expenses that she might incur during her stay in the UK.
I work as an IT Consultant through my own Limited Company, and have done since 1997. My typical annual turnover is in excess of £160,000, and I typically pay myself around £40,000 per year in combined salary and dividends. I own my own home, which is a 3 bedroom semi detached house. There is ample space for Miss xxx during her stay. I am a UK citizen.
I give you my full assurance that that I can support, maintain and accommodate Miss xxx without any recourse to public funds. I will pay for any medical treatment that she may require. You have my absolute assurance that she will return to China at the end of her visit, as we are both acutely aware of the impact any breach of visa conditions would have on her ability to visit in the future.
I would therefore be grateful if you can kindly issue the visa to her.
