Tier 2 general change of employer

Hi every one .
I am on tier 2 general visa d is working for the same employer for the past 5 yrs .I am changing my employer d I am about to apply for new visa .My son is my dependent ,he is 3 yr old d is on my previous visa.I will be applying for visa soon should I apply for my son too .
As I will be applying for ILR in the first week of March any way .
My daughter is 8 months she is currently having no visa .Can some one guide me how all this will work .

My 2nd question as my this new job is in shortage of occupation list ,Which application for should I fill ??
