Supporting documents - how recent do they need to be?

When I applied for my son's PR, I obtained a letter from school confirming that he's been a pupil from date XX. The letter is dated 28 Nov 2016. I'm submitting an application for his registration as BC next week - do I need to ask school to provide another letter or will it still be fine?
I've also got a letter from employer dated 27 Jan 2017 - I'm not sure if it's also needed for BC application but if yes, again - will it be good enough?

And do I understand correctly that a recently naturalised person can be the non-professional referee?
