No need for a visa for her. Just jump on a plane and off you go. The landing in UK will be via domestic terminal so no issue at that end.
The airline staff in Ireland will ask for her visa which will be the Stamp4EuFam. They may ask you to go to their desk and have the boarding card stamped as visa checked but that about it. I know Ryanair does that, dont know about other airlines. Its probably better to go the airline desk before you go through the security, e.g at bag check in desk and they should guide you through.
I also suggest that you keep your marriage certificate and the INIS approval letter just to be make it seal tight. Remember, she has an EU article 10 card and has a right to travel all around europe along with you. The max anyone can ask you is your marriage certificate to prove she is your spouse and thats it. The airlines know about it so I dont think you will have any issue. But its best to know your rights before you travel so you are prepared in case you are confronted by an idiot.
If you however, plan to drive then just board your car on the ferry and off you go.
