A few questions about form EU1

Hi everyone, thanks for taking the time to read this.

Long story short - I'm a non-eu national, married to an EU national + 2 kids. Moved from England to Ireland in early March and applied using the EU1 form.

She used to be on health-related benefits but now is declared self-employed.

As all of the documents including bills, tax forms and such took so long to get processed and have still not returned to us, what happens if we've sent the application and whilst the application is being processed, my visitor visa (3 months) in Ireland runs out? weird situation, I know.

Also, about the EU1, on self-employed, is there minimum earnings one should get or is there no "magic number"?

Under the EU1 form, there's a request for bank statements of the business for the last six months - We do not have a business bank statements as we use online platforms to run the business, would PayPal transactions suffice?

Hoping someone can shed some light on this,
