Dates on CoS for change of employment

Morning all

We have completed the RLMT for a candidate coming to us from within the UK. He is currently sponsored on Tier 2 with his current company.
When I assign his uCoS, what end work date can I put? Is it only until the end of his current visa (mid 2019, on a previous CoS from his current company), or can we restart a new 3 year visa term in this uCoS with our company (ensuring he doesn't stay over 6 years total, of course)?
