For Tier 2 to ILR its the date on which your Tier 2 was issue. If its 11th May 2013 then you'd complete 5 years 11th May 2018 and should be able to apply within 28 days of this date.My Tier 2 work permit approval date is 11 May 2013.
CoS work Start Date: 20 May 2013
Actual work Start date: 17 Jun 2013
Now the question is shall I consider my 5 years from 11/05/2013 or 17/06/2013.
That has nothing to do with your ILR eligibility. Though you'd need to provide the letter for your all the absences while you were on T2 from all the employers.Also, one thing to consider is after I got my initial work permit I went to India to get my family; so if I understand correctly the time between 11/05/2013 to 17/06/2013 will be counted as period outside the UK or off work.
Based on the above facts if I want to apply for ILR I can do this as early as 15/04/2017 (20 days for 11/05/2017). Will here be any issues if I apply on 15/04/2017.

Yes, I was out of the country and it was unpaid leave because it was before I joined my work which was on 17th June 2013.

My salary was always consistent in line with employers policy and in terms of merit increase it was in line with UK standards.
