unique question about schengen visa sponsorship

I am a Canadian resident who would like to celebrate his first wedding anniversary in Europe ( most likely Spain) with my wife who is living in India and waiting for her Canadian Spousal Immigration to join me in Canada soon. In the mean time I would like to go to Europe with her and spend 2 weeks during our first wedding anniversary.

Since my wife in India is not working and I would like to sponsor her to visit Europe, I am not sure if European consulates in India who issue schengen visa will accept any sponsorship documents from Canadian resident.

Please guide me to make my case stronger.
