Permanent Residency documentation for self-sufficient/contractor person

Hi All,
I am a Non-Eu citizen married to an Italian citizen and we are applying for Permanent Residency. Out of the 5 years, at least 4 he was a contractor with a limited company. He is an employee/director of his company but he pays himself below the threshold and the bulk of his income is paid via dividends.
We are afraid of not sending enough documentation, so we are planning to just send everything like self-assessments, consultancy contracts, invoices, dividends vouchers, company tax return, p60s..which is a lot of stuff and being 4 years is a lot of pages.
I am just worried that we are now sending too much? Could that be an issue, like don't send too little but don't send too much :lol:
I was wondering if there are other people here in the same scenario, company director who gets its income via dividends?
Would really appreciate any insights as this is a scary time, my 5 years residency visa has already expired and cannot bare having this visa denied because of not sending the right documentation.

I'm non EU married to German and we applied as self-sufficient too. But our proof of self-sufficiency is more difficult because my husband works online which is difficult to prove. but I will tell you the documents we sent:
1- completed and signed application form.
2- translated and certified copy of marriage contract.
3- comprehensive sickness insurance
4- proof that we are living together (photos - marriage ceremony photos - banks accounts or property on both your names)
5- bank accounts with sufficient funds
6- utility bills & rent bills

I think there is nothing wrong sending a lot of documents, it seems like they like them.

Bank statement showing the money coming in are enough

The source of money doesn't matter
