EEA(PR) proof of self employment

Hi everyone ,
Any help and advice will be much appreciated
I am non Eu citizen, my wife is a Romanian citizen,
We got married in April 2013 while I was holding a tier 4 general student visa , she was self employed while we got married , we apply for residence card in May and residence card was received in September which is due to expire next month
My question is
**while she was self employed in 2013 , is there any minimum income was required ?
**We have son born in 2016 together, can we include him with our application for PR or batter to wait to get PR and then apply directly British citizenship for him ?
