When we looked into this we were told (via official government brochures) that any savings which had immediate access and a known cash in value, would be acceptable. So an ISA for example, is fine so long as it can be cashed quickly.

So if these certificates have a value that can be cashed immediately and that you can show they are over 6 months old, all should be fine.

What you must keep in mind with the savings route is they will want proof the £62, 500 (in total, can be spread across accounts and currencies) has been held by you at least 6 months.

AND they will want all proof on headed paper, preferably stamped as genuine by the office administering the paper. Do not use internet downloads as they are most liable to a refused visa.
