I would not risk sending copies, especially bank statements. Many warnings of people being refused for internet copies of statements.
If they do not have a scanning service there in Thailand (where they scan all originals and send them electronically to Sheffield for you) then it may be best to have her original documents (TB, VAF form etc) sent to you by courier and then you send them all (registered) to Sheffield. Of course, if your spouse is using the scanning service, she needs to have all your supporting documents to hand.
We decided my wife would courier her docs to me. It adds to the costs but you can then know you are sending and have sent every paper they want and in original form where needed.
We were trying to find out if my wife could scan the docs she had and I send the rest from here but again, it was impossible to get clear advice from immigration.
While you would expect this to be fine, I really would not risk it - with you sending everything at least you know they got everything and will not cause you grief over the docs.
