How to bring USA spouse of US/Irish resident in UK (Scotland)

We are planning to move to Scotland for my husband's work. As he is an Irish citizen, it seems he has immediate right to settled status in the UK. Will I (USA passport only) apply for an EEA family permit--is this the only option, and will I have permission to work?

We previously lived one year on a Tier 5 family visa on our US passports (my husband's American funding source made him travel on his US citizenship, but this will not be a requirement for the new job). I did have a work permit on this visa.

My biggest concern is getting settled status for myself and starting path to British citizenship for all of us. But I do want to work.

Will my IDR be faster if he is settled on his Irish passport, than if I am a dependent on a visa on his US passport?
