What do you write if you are the company?
Is it just for the sponsored individual or do you have to write another one if they will have a dependent?

Assuming your question is about how a company can certify maintenance... in the CoS they just have to tick "Yes" for the question "Tick to confirm the sponsor certifies maintenance for the migrant".
My advice is based on personal research/experience, so pls check relevant UKVI sources.
