Is it important that the case is presented as Employed or Self Employed? Do we need to declare that the limited company was owned by me if the case is presented as employed?

If you are self-employed, you do not have the flexibility that someone has with pocket ltd company - can go any route, you should declare yourself self-employed.
http://www.ukba.homeoffice.gov.uk/briti ... documents/
I think UKBA is quite specific on what you would need to present:
Documents required for applications from self-employed people
If you do not pay tax through Pay As You Earn (PAYE) arrangements, you should provide:
* the most recent HM Revenue and Customs self assessment statement of account.
Good luck !
