Fiance Visa

Hi, I met my bolivian girlfriend a year and half ago, we lived together in london for 6 months on her tourist visa. She is now in Italy. Having been pretty confused by the whole process, we are in trying to put together a fiance visa application VAF2. Specifically is this the only visa that we(she) could apply for? I am also unclear as to what constitutes supporting evidence as well.
