No need to worry. Just give the recruitement agency name and provide estimate dates. Date(s) is if known question. Estimates are okay too. As long you did not work illegally, no issues.
3. I currently hold 2 jobs and will be resigning the 2nd job in May. In the employment section, I am unable to leave the end date for the additional job blank so I have added a random date in May. Will this be a problem?
The online form only lets you add one current job. Information should be accurate as of the date of application. If you apply in April, it is not advisable to mention a post ending date of May. Your employment is not relevant, even if you are unemployed is okay. Just to mention the other job, for now mention the start date in the additional notes at the end of the form and ongoing. When it ends does not matter. Your employment status is irrelevant for citizenship application
4. Do I have to attach P60s for all current and past jobs?
No
I am happy to attach a letter explaining any information I do not hold or remember
5. Proof of living in the UK - As a non-EEA spouse of a British citizen, I understand I should only provide 3 years evidence. I have provided evidence of my first visa in 2011, my first FLR (M) BRP in 2017 and employment contract since 2017. Will these suffice?
You are confusing two things here. You must declare ALL UK immigration applications in the AN form and UK employment history for the last 10 years where the form asks. Both of them is NOT the proof of living in UK. Since you are non-EEA citizen, proof of living simply is: Passport(s) and stamps covering last 3 years qualifying period, You do NOT need anything else
