Yes, I assume the SA302 does show that you have income that will allow you to sustain yourself without benefits. So, that should be sufficient. I checked Google but there was no info on that number at all. :(
The call was at 5:30 pm.

I did think it was weird to receive a call from HO at that time on a Friday evening, but then I'm quite nervous because I don't know anyone in Sheffield and have no other reason to get a call from there.

You do not need to send three months of business bank statements. You just need to send a statement to show that your business has a bank account and some business transactions on it.
