Tier 2 general - dependent visa extension

Hi,
I am in UK with Tier 2 general visa and my family with tier 2 dependent visa. Under this visa my wife is working in UK. now our visa is expiring on 23rd Jul 2015. My employer will process for visa extension for me and my family. But, looks like they will just do close to that date to avoid lapse of visa period.

Now, my question is what is the proof required to her employer to continue her job that her visa extension has been applied.

Why not apply in person at premium service centre? Alternatively, the acknowledgement letter and her employer can also check themselves with HO.

In my case it is my employer is processing the visa extension.
