Any absence is counted towards the limit you have to keep within (assuming you are aiming for ILR at some point). Your absences should not be more than 180 days per 12 month cycle and the cycle depends on when you intend to apply for ILR (i.e. not necessarily a calendar year). Assuming too that you will continue to be employed by your UK sponsor and receive your salary in the UK after the appropriate taxes.
For working in Europe, you will need to research the requirements per country you intend to work in or visit for business purposes.
