I am the UK sponsor of my husband who is currently in Dubai on a working Visa. My Husband is of Pakistani nationality.

1) I would like to know what my best option would be to meet the financial requirement.

I am currently working for an agency contract for 3 months on an hourly basis which is fixed at 10.00 per hour and work 37.5 hours per week. I get paid weekly. This contract finishes 31/01/2019.
I start a new agency contract on 04th February with a different agency which will hopefully be a ongoing contract rate of pay should be hourly £9.95. I believe I need 6 Months payslips can I use these from two separate agencies?

I have Cash savings of £30,000 therefore enough funds to support my husband.
Please advise me on my best option.

Secondly
2: what are the requirements for the employment letter with regards to his employment (do the agency just need to state how many hours i work per week and rate of pay?) Or does the word non salaried need to be written on it too with the gross annual income?

I would really appreciate if someone could answer

In your situation you will have to use category B if you cannot wait another 6 months with your present employer. Under category B you will have to send 12 months of payslips from all employers with corresponding bank statements. And as you stated to have £30000 then instead of £18600 the following reduced income level you can meet:

30000-16000= 14000/2.5= £5600.

£18600-5600= £13000

Thankyou for that information really appreciate it. My 3 months agency contract was meant finish today however the manger has extended this, which means I will be there in total 6 months. Please advise what would be best to do now?

In that case if you are not in hurry then simply wait for another 3 months and then apply under category A.
