In-country Tier-2 Approval/Refusal Rates

Hi all,
I'm currently switching employers (new COS has been issued and application has been filed last week), but I need to resign within the next few days at my current employer given my notice period.

I'm a bit reluctant to resign before the new visa is issued (I am generally very risk-averse and don't want to end up quitting current job + getting a refusal on the new visa and having to leave the UK) but I can't stretch it beyond the next few days.

Does anyone have any info on approval/refuse rates for switching visas in country? Am I just being paranoid?

Any help/advice is welcome. Thanks in advance.

You are being paranoid.

If you meet all the requirements, then there is no issue. HO doesn't simply refuse applications for no reason. You/new employer either meet the requirements of the rules or you don't.
