Wife Visa Expiring soon. Application date? Holiday query?

Hi all
My wife first half of 2.5 years visa expires on the 19th May. Both me and our 4 years old are British.
I understand that the earliest we can apply is 28 days before the 19th May. This is quite clear.

However, we have now got a last minute opportunity to fly for a quick holiday and we will return on the 16th May which is 3 days before expiry.

Question/Query:
1. Can we return on the 16h May? Is there a 'minimum visa period/days' that you need to have for you to be able to get in at UK Border?
2. I will draft the application online and press submit on the 16th when we are back. She has already done and passed the language test. This should be fine?
