The earnings requirements is gross earnings for both employed and self-employed people.

If they have made a ton of money, can they demonstrate savings of £62,500 for six months in an easily accessible bank account? That is an alternative to showing annual earnings.

Doable, but make sure that your partner's earnings over the last
12 months show as being above £18,600. She will of course need to be legally employed (employment contract, salary deductions, etc).

This is probably not the best place to discuss or decide the fairness or otherwise of the Immigration Rules. We try and help out people navigate the Rules as they are. The Rules exist in the shape and form that they are in and all we can do is either navigate them successfully or move to another country (such as Canada) which has a different set of them, which may be more agreeable to you.
If you want to make your point and complain about the Rules, the person to discuss them with and complain to is
your MP and their staff.
