1) Will they accept on-line statements printed in colour?
Only if they are certified as true copies by the bank manager with who you have accounts. Just on-line bank statements printed off in colour or b/w will not suffice I am afraid
2) Will they accept them if they are notarised by a Philippines lawyer (notary)? Any special wording needed or just standard notary practice (stamps)? My idea was to view the accounts online with the notary, have them printed and notarised.

Arrived in Philippines November 2010. Still here (May 2011). Married February 2011. Didn't expect to get married, so didn't bring any documents. Besides, all my accounts are internet only.
Why dont you return to UK and carefully prepare the necessary documents and then send them off. Doing things without careful thoughts and well prepared evidence usually end up in a refusal which is likely to cause more heartache and stretches the matter out even further.
I have enough savings for us to live for several years, just a case a proving it.
I kept my rented place on in the UK as it's reasonably cheap and I only expected to be away for 6 months backpacking around asia.
I couldn't find anything on the forum that directly addresses my concerns.
I've tried to put useful keywords in the title to help others.

Can you contact your bank in the UK and ask their advice? You could send them printouts and ask for verification by post.
I also think that batleykhan provides good advice about returning to the UK to make the application. You say that you don't want to be separated for any length of time, but it's not likely to be more than a couple of months if you satisfy all the requirements.
It would be expensive to go through the process of refusal simply for want of something so straightforward.
