Does the MET apply for aquiring British Citizenship

I'm currently wading through the mountain of paperwork for British Citizenship application.

Does the Minimum Earnings Threshold apply in respect to the section that asks for proof of National Insurance Contributions?

There is no mention in the guidance notes that it does .

I work part time- 15-25 hours per week.

No. Employment or certain income threshold is not a mandatory requirement for citizenship. You can work full time, part time or not at all if you wish.
