I have got one employee through out my extension application, but another full time left but I do have one part time still , so one full time employee and one part time employee, now my five years will be finish in next year May so I believe I can apply for ilr after having two full time for one year or just add one part timer so I will have one full timer and two part timer to make upto , is this ok ?
Don't understand the question. What visa has she been on ? Is she born in UK ?
There are no income requirements. There is a general requirement to show that you will not depend on benefits but it is not specified what form that should take. Any income, bank balances, etc. should help with that. So far, haven't come across any rejection on that basis, so I think it is just a generic requirement.
She will apply extension for PBS dependant.

You only need to send them the FPS reports for the period of employment you're using to claim job creation points. The requirement to send them the old FPS report showing start date is NOT there anymore. You can just confirm the start date in the application form.
For you, you only need the Life in the UK test certificate. For your wife, I am not sure what the requirements are.
What did she use for the initial application/extension? In most cases, she would not need a test unless the earlier one is no longer an acceptable qualification
