Weekend holidays and continuous residency

I am on a five year ancestry visa currently.

I intend on applying for ILR at the end of my visa period.

My employer allows me three days off (Sat, Sun, Mon) every second weekend.

I would like to take a couple of weekend trips away on these days. I wouldn’t use this as part of my holiday leave; just as quick secondments.

Would this break my continuous residency if I am taking holidays out of the UK that are not part of my planned holiday leave?

Do I require a letter from my employer when applying for ILR if I am taking a weekend trip that does not interfere with my work schedule?

If I leave Saturday and arrive back in the UK on Monday, am I correct in assuming that this is counted as only one day out of the country (Sunday being the full day).
