spouse and child visa extention after 2.5 years!

Dear respected members of the forum!
Hope everyone is keeping well and safe at these times...

On February the 18th we are due for an extension for my wife and my son! (after2.5 years route)
My wife has a paid job since October 2020 which is £1350 before tax.
I Have started to work (signed a contract for hospitality) as of 28.12.2020 after working for two weeks company is closing down due to another lockdown which means we cant get a furlough and makes me continue getting UC no other choice for now.
so on these two weeks, I've been paid £450 so far. (paid less than expected but were told that they will adjust it so around £100 or so.)

I've been doing Amazon flex since August as self-employment but I don't know if they will count it.
I've stopped working there since I found my new job which was closed recently due to another lockdown.

I'm a British citizen and also have a second child who is born here and British too if that helps in anyways. (also my wife is pregnant 3month now).

we are concerned about financial requirements, at the same time if it was not for covid and continuous lockdowns I would be meeting financial requirements for sure.

my wife has an appointment for an English test in two weeks' time.

so we have October November December January's payslip for my wife
plus my august till December with amazon flex making around 1k a month minus expenses and my two weeks payslip from my job which I've started recently and closing down due to lockdown.


any advice options and expertise would be very helpful for us, please.

Self employed won't count here because you will need to rely on your most recent financial year april to april of the following year.

I thank you for your response

we have not actually due to lockdown!
back in 2020 January I've started work and worked for a month or so before the lockdown the same recently and worked for two weeks before the company closed down.

some say they will calculate a minimum of 6 months of employment and you have to be in at least for 6 months. my employment was not long due to the covid. two short employments... plus my wife only started working since October 2020 which will make 15k annual. plus if they count my august and September which i did around 1.5k with amazon self-employment?

is there an exception?
what is the worth scenario?

do you think they might put us in a 10-year route? and if so what is the point of paying the fee (borrowing it in the first place due to the difficult situation)?
