The immigration rules don't specifically state that overtime must be addressed separately in relation to the employer letter, it only references salary (or non-salaried employment by virtue of paragraph 18 of Appendix FM-SE). A) For self-employment, the required documentation is to cover the last full financial year (which sounds like it should be 17/08/2018 to 31/08/2019). They are only interested in your income to confirm it meets the financial requirement. Your other financial circumstances and what you spend money on are irrelevant to the visa and won't be considered.
