The UK don't care how many nationalities you have, they simply like to know as the forms ask. Whether any particular country allows, depends on the country and you will need to check with mainly the Taiwanese authorities. Australia and NZ allow dual/multi nationalities.Does UK allow more than 2 nationalities if my other countries' can allow more multiple nationalites? Or it has to be case by case? If that is the case, where could I find such information?

Do you know how would one request back the passports (assuming I am requesting my other passports that I will not have my UK visa on), how would I go about doing that and would it impact my visa approval/time? P.S my New Zealand passport has expired - which I have not renewed, so I would still assume I would provide this expired passport as part of my documentation too?

You could apply in person for a same day decision before travelling. There is no absence limit for people on a spouse visa so not sure what time outside the UK you are concerned about.The reason I am not applying now for my spousal visa is because I am flying back to Taiwan to give birth end of this month and I do not want my time outside of UK to be counted until I need to apply in November.
This is nonsense. There is no such restriction on absence. The 180 days is ONLY applicable to PBS route visa holders and not spouse of British Citizen visa holders. There also is no 90 days each time limit in any visa category.i don't want to be restricted on the time limit once you are on a spousal visa - I read it is 180 days per each rolling 12 months and no more than 90 consecutive days each time (and only 90 days in last year before applying for ILR?)

Yes, you get your passport back on the day if your visa is approved. The BRP card takes 2 to 10 days to be delivered by DX Couriers though.The same day application in person - do you get your passport back on the same day also along with visa if it is approved?
No, you are not applying for settlement on Set(M). This is an ILR application which you don't qualify for, You are applying for Further Leave to Remain Spouse visa,Applying for Same Day appointment
