Include on your letter than you have earned over £18,600 past 12 months and you include P60 detailing the amount and you also currently hold a job which you earn £18,600.
You can also explain it has been unreasonably hard for you to get your ex employer to write a letter and stamp payslip as you are currently not employed by them. State it has not been possible for you to attain stamped payslips and letter from ex-employer so you are including what was possible to attain, i.e. non stamped.
Also state for verification and details of pay details from previous employer they can be contacted on the details provided. This will all show you have reasonably tried your best to attain required documents, which you could not do any further.
Include the email / letter from ex-employer to provide proof that ex-employer stated they cannot stamp it etc.
Just apply with all you've got, it would be far worse to be a over-stayer and then apply. You will have in-country appeal anyway so your wife wont be expected to leave straight away.
